The Famous Sinaing na Tulingan of Batangas: ALA EH! Tara Kain !

            We all know that the Philippines have a rich sea that can provide good and delicious seafood like shrimp, octopus, scallop, crabs, lobsters, sea urchin, and the most common fish. In Batangas City, you can see the different kinds of fish but the well-known fish is Tulingan or Mackerel Tuna.

           As a Batangueña I would like to introduce one of the famous food delicacies in Batangas that my grandfather cooked sometimes when he was alive, this dish is one of a kind, and the Batangenous truly cooked it with their unique recipes.

        Sinaing na Tulingan is a popular dish in Batangas, that you can witness on each corner of the different wet Markets in the province. This traditional dish is usually cooked for 6-8 hours with a low heated fire, each province in Batangas has a different way to cook it some of them cook it in a traditional way using a clay pot or "Palayok" with coconut milk, or Sampaloc for a sour taste. This dish is always on the list of Batangeñous every festival celebration, Christmas, New Year, and other events.

Ingredients

• Tulingan or Mackerel Tuna

• Dried Kamias

•Pork Belly

• Sukang Irok

•Salt

Ways to Prepare the Fish and Cook it:

1. Clean the fish

2. Soak in a Bowl of Cold Water for about 20-30mins to get rid of the blood and rinse it.

3. Flatten the fish using your hand palm.

4. Season with Rock Salt

5. Wrap the upper part of the fish using Banana Leaves to hold the fish together.

6. Cooked it for almost 6-5 hours but it depends on you how long since the longer you braise it will be tastier.

7. When the fish is ready you can apply the Kamias, patis, and water to the pot.

8. Low the temperature of fire to avoid burning Tulingan.

9. Transfer the fish to the plate and serve with warmed rice.
