As a Batangueña, I'm happy to share with you the best food delicacies and dishes of our province that can offer and surely can satisfy your taste.


Sinaing na Tulingan



Sinaing na tulingan is one of the famous Batangeñous cuisines that represent their very own culture. Perfect combination if we add rice and mix it. They cooked this dish using a "palayok" or clay pot to be more flavorful and can smell the natural aroma. 

This dish contains different ingredients like bullet tuna, saltwater, kamias, salt, garlic, and fresh group pepper. To be more flavorful they even add "siling mahaba" or long chili green.

Lomi Batangas

You can find a normal lomi or instant lomi in your own hometown or city. But when you visit Batangas you will discover authentic different kinds of lomi in one big bowl at a cheap price. Lomi Batangas is unique and contains different ingredients than other ordinary lomi, their lomi is very ticked. The texture of the noodles, when you chew it's perfect, especially for the oldies.

The common toppings of lomi Batangas are crunchy pork rinds, pork belly, sliced boiled egg, sausages, spring onion, chopped chili, pork liver, and kikiam.

Bulalo Batangas

A warm bowl of Bulalo in Batangas, this dish is well known and we can order it in other restaurants in metro manila. 

For us, bulalo is a very common dish, but Batangeñous cook it differently using a clay pot or "palayok" to be more traditional and can add flavor. Bulalo contains beef shanks, black pepper, garlic, onions, and salt, to be more flavorful they add pechay, potatoes, and corn. This dish is very perfect for rainy days or cold seasons, in just one sip you can feel the warmth.

Batangas Taghilaw

Taghilaw of Batangas, for other people it looks like not appetizing but when they try it they just realize "we should not just the food by his looks". This dish is very delicious it contains different parts of pork and beef, common ingredients are different organs and part of the pork, salt, black pepper, garlic, onion, vinegar and to be more flavorful Batangeñous add some pork stock. 

As you visit the Batangas as a First-timer I highly recommended this food, perfect combo with rice.

Adobo sa Dilaw




Adobo is one of the famous Filipino cuisine, that commonly cooked by using soy-sauce, vinegar, and simmered pork. Batangeñous created a twist based on their taste buds, based on the name "dilaw" it came from one of the major ingredients yellow ginger. If you try to taste this dish sweet, sour and a little spice, I assure you it's very delicious instead of having a one cup of rice you will demand an extra rice.

Gotong Batangas is not typical porridge that we use to eat at Metro Manila.  In Lipa Batangas City, they're the best when it comes to Gotong Batangas, what makes them unique? They used water of rice after you wash it for broth and beef stocks. Aside from that they mix it with beef tripe, like kidney, liver, heart and intestines of beef, but it depends on you as a customer if you want to have a mix toppings.

In the Philippines we encountered different Atchara but they commonly used as main ingredients is Green Papaya. Batangas, Calaca one of the famous Town in Batangas city that aside from creating a unique atchara they also have a festival to celebrate atchara called " Calatchara Festival".

What is the uniqueness of their atchara unlike to common atchara that we know?

They simply add shredded carrots, onions, ginger and bell peppers perfect combination to when eating grilled fish and barbie q.

Tamales

The tamales of Batangas located at Ibaan Batangeñous, make a twist to be very uncommon unlike other tamales in another town. Instead of having a filling like beef, roasted mead, fish, and vegetables. Batangeñous make this using banana leaves, and the filling is mix of peanuts, shredded chicken, eggs and annatto, this dessert is highly recommended for "pasalubong".

Kalamay Hati

This dessert or typical "meryenda" is the best partner of Kapeng Barako a well known hot coffee in Batangas.
